Nuts may also be treated with radiation in order to increase shelf-life. The nutritional profile of nuts can be altered or destroyed if nuts are exposed to heat through roasting or high temperatures. That is why raw nuts provide a superior nutritional value. Nuts should also be kept dry, cool and away from sunlight, especially in Hong Kong where the temperature can get hot and humid. After the package is opened, exposure to oxygen may speed up the deterioration of nuts. For this reason, it is best to keep them in the refrigerator or freezer.
